Deviled Eggs with Sun-Dried Tomatoes and Chives

6 hard cooked eggs, peeled and halved
1/4 cup chopped and drained sun-dried tomatoes
1/4 cup minced fresh chives
1 Tbs olive oil, more if needed
1-1/2 tsp fresh thyme
1-2 tsp white wine vinegar
Additional strips of sun-dried tomatoes

Mash the yolks and finely chop up 2 egg whites as well. Mix into the yolks. Add the sun-dried tomatoes and the next 4 ingredients. Mix well and season with salt and pepper. Spoon 1 Tbs of the yolk mixture into each egg white, mounding slightly. Top with an additional strip of sun dried tomato.
