Ancho-Honey Glazed Ham
1 small ham (approximately 2 lbs.)
3 dried ancho chilies
1/4 cup honey
4 cups pre-made pancake batter
1 tsp. fresh rosemary
1 tsp. basil
1 tsp. thyme
1 tsp. chives
1/4 cup balsamic vinegar
1 tsp. sugar
1/4 cup maple syrup
Soak ancho chilies in warm water until soft. Remove from water, chop
finely and place in a mixing bowl with 1/4 cup honey. Stir and let
sit.
Remove ham from package or can. Score a diagonal pattern 1/4-inch
deep with a knife and dust ham with salt and pepper. Bake in a
350-degree oven for 10 to 15 minutes.
Stir fresh herbs into your favorite pancake batter and refrigerate
until needed. Combine balsamic vinegar and sugar in a saucepan and
simmer until it reduces by one-third. Remove from heat, let cool
slightly and add maple syrup.
Remove ham from oven, coat with ancho-honey glaze and return it to
the oven. Make pancakes, slice the ham and serve everything with the
syrup mixture. Makes 4 servings. |
