Chocolate Chip Ice Cream Sandwiches
1 (18-oz.) package cookie dough
1 pint vanilla or chocolate ice cream, softened
Cut the cookie dough into 16 equal pieces. Place on cookie sheets
and bake for 9 to 11 minutes according to package directions. (The
cookies should be baked so they are crisp, rather than soft.) Set
aside to cool completely.
Put ice cream on bottom side of one cookie and top with a second
cookie, pressing together gently. Wrap tightly in freezer-quality
plastic wrap and place in freezer until time to serve.
Makes 8 servings. |
