Chocolate Raspberry Ice Cream
3 oz bittersweet chocolate
1 cup milk
2 cups cream
4 egg yolks, lightly beaten
1 cup sugar
1 cup raspberries
Beat 3/4 cup sugar into eggs. Melt chocolate over low heat. Heat
milk and 1 cup cream. Stir hot milk and cream gradually into
chocolate. Stir hot chocolate and milk mixture into eggs. Add cream
remaining cream. Cool. Mash raspberries together with 1/4 cup sugar.
Just before adding to ice cream maker, stir juice from berries into
mix.
Freeze in ice cream maker according to
manufacturer's instructions. Just before frozen, add berries. |
