Coffee Ice Cream
2 eggs
1 1/4 C. sugar
1 3/4 C. whole milk or half-and-half
2 C. heavy whipping cream
2 t. vanilla
1 1/2 T. instant espresso coffee, dissolved in tiny amount of warm
water
Beat eggs and sugar in electric mixer until thick and cream-colored.
Add milk, cream, vanilla and dissolved instant coffee. Mix well.
This can be refrigerated or used immediately.
Pour into ice cream maker and proceed with manufacturer's directions
for making ice cream.
