Chocolate Coffee Cake Recipe
1 C. butter, softened
1/3 C. cocoa powder
4 eggs, beaten
2 C. sugar
2 C. all-purpose flour, divided
1 t. vanilla
1 t. baking soda
1 (3.9-oz.) pkg. instant chocolate pudding
1 C. milk
1 T. confectioners' sugar
Preheat oven to 350� F. Melt butter and stir in 1/3 cup cocoa and let cool.
In mixing bowl, mix eggs, 2 C. sugar and 1/2 C. flour. Then add the cocoa
mixture to the egg mixture. Add in the remaining flour. Add vanilla, baking
soda, pudding and milk and beat well.
Bake in a 9 x 13-inch pan, sprayed with cooking spray for 35 minutes or until
nothing sticks to inserted toothpick. When cool, you can lightly dust with 1
tablespoon confectioners' sugar. Serve warm or cold.
