Easy Refrigerated Bran Muffins

20 oz. box raisin bran cereal
3 C. sugar
5 C. flour
5 t. baking soda
1 T. salt
1 C. walnuts, chopped
1 quart buttermilk
1 (20 oz.) can crushed pineapple, undrained
4 eggs
1 C. vegetable oil

Pour cereal into a large bowl. Add sugar and stir. Sift flour, baking soda and salt into cereal. Add walnuts and stir.

In a separate large mixing bowl, mix buttermilk, pineapple, eggs and oil. Stir until completely mixed, then pour into dry mixture and stir completely.

Bake in greased muffin tins, filling each cup 2/3 full. Bake at 350�F. for 25 to 30 minutes, or until toothpick inserted in center of muffin comes out clean.

This mixture can be refrigerated for up to 6 weeks.

Makes 5 dozen muffins
