Orange Teriyaki Salmon

Serves: 4

3 tablespoons fresh orange juice, or orange juice from concentrate

2 tablespoons reduced-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon minced garlic

2 teaspoons minced or chopped ginger

4 salmon fillets, about 6 ounces each and 1 inch thick

Preheat the oven to 450 degrees.

In an 8-inch square baking dish, whisk together the orange juice, soy sauce, rice vinegar, honey, garlic and ginger.

Add the salmon fillets, spooning the sauce over them.

Bake for 13-15 minutes or until the fish is done. Test by cutting it with a fork; the salmon should easily cut but not flake apart completely.
