Pecan Sticky Muffins Recipe
2 C. flour
1 T. baking powder
1 t. cinnamon
1/4 t. salt
2 eggs
1 C. milk
1/4 C. vegetable oil
1/2 C. packed brown sugar
1 t. vanilla
Topping
1/4 C. butter, melted
1/4 C. brown sugar
1 C. chopped pecans
In large bowl, combine flour, baking powder, cinnamon and salt. In another bowl,
beat the eggs, milk, oil, sugar and vanilla until smooth. Stir in dry
ingredients until just moistened.
Into each greased muffin cup , spoon 1 t. butter, 1 t. brown sugar and 1 heaping t. of pecans. Top each with 1/4 c. batter.
Bake at 350�F. for 25 to 30 min. or until muffins test done. Invert pan onto piece of foil. Let stand for 2 min., remove pan. Serve warm.
