Baby Porcupines
1/2 cup rice uncooked
1 pound lean ground beef
1 tablespoon finely chopped onion
2 tablespoons finely chopped green bell pepper
1/2 teaspoon salt
1 clove garlic minced
2 cups tomato juice
4 whole cloves
1/2 teaspoon oregano
2 tablespoons Worcestershire sauce
In a large mixing bowl, combine rice, ground beef, onion, bell
pepper, salt, and garlic; mix well. Form into 1-1/2 inch balls.
In a large skillet, combine tomato juice, cloves,
oregano, and Worcestershire sauce; heat to a simmer. Add meat balls.
Cover and simmer for 50 minutes.
Remove cloves before serving. (serves 6) |
