"Recipes for Starting Your New Year"

Caesar Salad Recipe

Dressing:
1 egg
3/4 C. salad oil
1/4 C. fresh lemon juice
1 t. salt
1/2 t. black pepper
1 t. Worcestershire Sauce
1/4 C. grated Parmesan cheese

Submerge egg in boiling water for 1 minute. Break into a bowl and whip until fluffy. Continue whisking and slowly add the oil. Dressing should be thick. Add the rest of the ingredients and whisk again.

Salad:
2 heads of cleaned Romaine lettuce torn into bite size pieces.
2 C. croutons

To make the croutons:
Cut a loaf of good French bread into thick slices. Remove crusts. Cut into 1/2 inch cubes.

1/4 C. butter
2 garlic cloves, minced fine
Heat some of the butter and add garlic to a frying pan. Add bread cubes and slowly fry until they are golden brown. Add butter as necessary.

To assemble:
Place greens in a large bowl. Add croutons and dressing. Toss. Place on individual plates and serve.
