Apricot Cheese Delight
1 3 ounce pack orange or apricot jello
1 envelope unflavored gelatin
1 cup hot water
1 cup cold water
1 small can crushed pineapple, reserve juice
1 cup mini marshmallows
1 small can apricots with juice
1/2 cup sugar
1 egg, beaten
3 tablespoons flour
1 cup pineapple juice
2 tablespoons butter
3/4 cup grated longhorn cheese
1 cup whipped cream
Chop apricots with juice in blender or food processor. Mix gelatins
with hot water until dissolved then add cold water, fruit and
marshmallows. Chill until set.
Combine sugar, egg, flour, and pineapple juice
and boil until thickened. Remove from heat and add margarine; cool.
Add cheese and whipped cream and spread on other mixture. Sprinkle
with grated cheese. |
