Green Chili Rice

1/4 cup margarine
1 cup chopped onion
4 cups rice, cooked
2 cups sour cream
1 cup cottage cheese
1/2 tsp salt
1/8 tsp pepper
2 (4 oz) cans green chile peppers, diced
2 cups cheddar cheese or Monterey Jack cheese, grated

Lightly grease baking dish.

Saute onion in margarine while rice is cooking.

Remove from heat; stir in rice, sour cream, cottage cheese and seasonings; mix well.

Layer half of rice mixture in dish.

Spread 1 can of peppers on top; sprinkle with 1/2 of cheese; repeat.

Bake at 375� for 25 minutes, uncovered.
