Carrot Slaw
3 tablespoons oil
1 tablespoon white wine vinegar
1 1/2 teaspoons caraway seeds
1 pinch salt
generous grinding black pepper
2 cups shredded carrots
Mix oil and vinegar until well combined. Add caraway seeds, salt and
pepper, and shake. Pour over shredded carrots. Chill before serving;
serves 4.
