Cucumber Dill Sour Cream Salad
4 large cucumbers
1 tablespoon salt
2/3 cup sour cream
1 tablespoon oil
2 tablespoons wine vinegar
2 teaspoons dried dill
1/2 teaspoon sugar
salt and pepper to taste
Peel cucumbers, and slice as thin as you can. Sprinkle with salt,
and toss in a colander. Let stand and drain at room temp for 1 hour.
Rinse, and squeeze dry in several tea towels.
Combine remaining ingredients. Stir in cukes.
Chill well. |
