Dilly Cauliflower
1 head cauliflower, cut into flowerets
1 tsp. Dijon mustard
1 T. balsamic vinegar
1 T. lemon juice
1 green onion, chopped
2 T. fresh dill, minced
2 T. olive oil
salt and pepper to taste
garnish with 1/2 cup walnuts
Place cauliflower in a steamer or in a colander set inside a
saucepan of boiling water. Cover steam cauliflower until tender.
In a mixing bowl, combine mustard, vinegar, lemon juice, onion,
dill, olive oil, salt and pepper; whisk well.
Place cauliflower in a serving bowl and toss with dressing. Garnish
with walnuts. |
