Bride's Chicken Recipe
1 1/2 C. cottage cheese
3 - 4 T. mayonnaise
1 t. curry powder
2 T. apricot or mango chutney
3 C. cooked chicken
16 oz. canned apricot halves in juice
1 C. slivered toasted almonds
Fresh parsley
In large bowl, mix together cottage cheese or ricotta, mayonnaise, curry powder
and chutney. Taste and add more curry if required. Add diced chicken. Chop half
of apricots (drained) and add to mixture. Place in serving bowl; chill before
serving. Garnish with remaining apricots (sliced), and sprinkle with almonds.
Add parsley sprigs; serve.
