Irish Apple Cake Recipe

Irish Apple Cake
(Serves approximately 6 people)
1 3/4 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 lb butter
� cup + 1 Tablespoon sugar
1 egg
� cup milk
2 large cooking apples
2 or 3 cloves, optional
Cut butter into flour, salt and baking powder with two knives or processor to
make dry crumbs. Add �-cup sugar, beaten egg, and enough milk to make a soft
dough. Divide dough in two. Roll one half into a circle to fit a greased
oven-proof plate. Peel and core apples. Slice them on to the dough and add I
Tablespoon sugar and the cloves. Roll out the remaining pastry and fit on top.
Press the sides together; cut a slit through the lid. Bake at 350 degrees about
40 minutes, or until apples are cooked through and the pastry is nicely browned.
Good served hot with ice cream!
Editors� note: I brush the top crust with milk and sprinkle it with sugar to
make the crust more golden.
