Auntie Marie's Irish Brown Bread
3 cups white flour
1 cup coarse Irish wholemeal flour (or substitute whole wheat flour)
1 teaspoon salt
1 teaspoon baking soda
1 ounce butter
� pint buttermilk
Sift the salt and soda with the flour. Add the butter and mix together with your
fingers until it crumbles.
Add � pint buttermilk (or substitute regular whole milk with 1 teaspoon lemon
juice left overnight).
Mix into a nice dough -- not too dry or not too moist. Don't handle it too much.
Flatten into a round and bake in a large tin at 350 F in the center of the oven
for 45 minutes exactly. Pop out onto a rack to cool.
Yield: 6 to 8
