Cousin Jack Cookies Recipe

1 C. currants
1/2 C. hot water or milk
1 C. solid vegetable shortening, margarine or lard or a combination
1 C. sugar
2 eggs
1 t. vanilla extract
2 1/2 C. flour
1 1/2 t. baking powder
3 t. ground nutmeg
1 t. salt

Preheat oven to 350�F.

Soak currants in water or milk. Set aside. Meanwhile, in bowl, cream shortening and sugar. Beat in eggs and vanilla. Blend in dry ingredients. Stir in currants with water or milk. Cover and refrigerate until chilled.

On heavily floured surface - flouring top of dough also - roll out dough as for sugar cookies. Cut out with cookie cutter and place on ungreased baking sheets.

Bake in preheated oven 10 to 12 minutes. Remove to racks to cool. Cookies will be soft. Makes about 28 (3-inch round) cookies.
