Black Russian Pie
2 cups Oreo cookie crumbs, plus 2 tablespoons for garnish
3 tablespoons butter, melted
1 pound marshmallows
3/4 cup milk
1/3 cup Kamora (see note)
3 cups heavy (40 percent) whipping cream, divided
Whole Oreo cookies, for garnish
Combine 2 cups crumbs with melted butter; press into pie pan and
chill.
In a large pot over low heat, melt marshmallows with milk, stirring
until completely melted. Pour into a large mixing bowl; set the bowl
on ice and stir until the marshmallow mixture is cool. Stir in
Kamora.
Whip 2 1/2 cups of cream to soft peaks. Slowly fold the whipped
cream into the cooled marshmallow mixture. Spoon into the crust.
Freeze until firm, then cover. Store in the freezer.
Transfer the pie from the freezer to the refrigerator 1 hour before
serving. Whip the remaining 1/2 cup cream; spread or pipe over pie.
Sprinkle on the reserved 2 tablespoons Oreo crumbs; garnish with the
whole cookies.
