Cider Candied Sweet Potatoes
2 cups fresh pressed apple cider
1 1/2 cups honey
grated zest of 1 lemon
4 tablespoons lemon juice
3 tablespoons unsalted butter
1/2 teaspoon cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
6 medium sweet potatoes, peel and slice crosswise -- 3/4" rounds
In a deep medium saucepan, bring the cider, honey, lemon zest, lemon
juice, butter, cinnamon, allspice, and nutmeg to a simmer over
medium heat and cook for 10 minutes. Add the sweet potatoes and
partially cover. (Add more cider if needed, to barely cover the
sweet potatoes.) Simmer over medium low heat until the potatoes are
just tender but not falling apart, about 45 minutes.
Using a slotted spoon, carefully transfer the
sweet potatoes to a warm serving bowl and cover with foil to keep
warm. Increase heat to high and boil cider mixture until thickened
and evaporated to about 1 cup, 5-8 minutes. Pour the hot syrup over
the sweet potatoes and serve immediately.
