Orange-Wild Rice Blend
1 c Water
1 c Chicken Broth
1/2 c Orange Juice
1/2 ts Grated Orange Peel
1/2 c Uncooked Brown Rice
1/2 c Uncooked Wild Rice
1/4 ts Salt
1/8 ts Pepper
2 tb Toasted Pine Nuts
Heat water, broth, orange juice, orange peel, brown rice, and wild
rice to boiling in a 2-quart saucepan; reduce heat to low. Cover and
simmer about 45 minutes or until liquid is absorbed (if rice sticks
to pan, stir in up to 2 tablespoons water). Stir in salt and pepper.
Sprinkle with pine nuts before serving. |
