Pineapple-Sweet Potato Pie Recipe

3 or 4 large sweet potatoes
1/4 C. evaporated milk
2 t. vanilla
1/2 C. butter, melted
3 eggs, beaten
1 1/2 C. sugar
1 small can crushed pineapple, drained
1 (9-inch) unbaked pie shell

Boil sweet potatoes in clear water until tender. Peel potatoes while warm, put into a large bowl and mash.

Preheat oven to 350 F. To mashed potatoes, add remainder of ingredients except pie crust and stir well. Pour into unbaked pie crust. Bake for 45 minutes until light brown.

Makes 8 servings.
