Roast Turkey with Orange Oregano Butter
In a medium bowl, mix together
1 or 2 sticks softened butter (depending on the size of your bird)
1 or 2 tablespoons oregano (Rosemary is nice too)
2-3 tablespoons orange juice concentrate
With your hands, spread the butter mixture under the skin of the
turkey. "Wipe" your hands off on the outside.
Loosely cover with heavy foil and roast at 350 degrees 15-20 minutes
per pound. Uncover for the last hour for crispy skin. |
