Spicy Roast Turkey
8 cloves garlic
3 tablespoons rosemary
1 teaspoon paprika
1 tablespoon pepper
1 teaspoon salt
2 tablespoons olive oil
1 4 pound frozen boneless turkey, thawed
In a food processor, combine garlic, rosemary, pepper and salt; turn
the motor on and add oil until garlic is coarsely chopped.
Preheat oven to 350�F. Spray a roasting pan and rack with non-stick
vegetable spray.
Spread half the garlic mixture over the inside of
the turkey. Reroll. Tie firmly with string ever 2-inches. Spread
remaining garlic mixture over the turkey. Place on rack in roasting
pan.
Roast 1-1/2 to 2 hours or until a meat thermometer inserted in the
center registers 170�F. Remove from oven. Let stand for 20 minutes
before removing string. Cut into thin slices to serve. Spoon pan
juices over the turkey. |
