Gingerbread Waffles
1 cup flour
1-1/2 tsp. baking powder
1 tsp. ground ginger
3/4 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. baking soda
1/4 tsp. dry mustard
1/4 tsp. salt
1/3 cup packed brown sugar
1 egg, separated
3/4 cup buttermilk
1/4 cup molasses
3 T. butter, melted
1/8 tsp. cream of tartar
In a large bowl, combine first 8 ingredients. In a separate bowl, beat brown
sugar and egg yolk until fluffy. Add buttermilk, molasses and butter; stir into
dry ingredients just until combined.
In a small bowl, beat egg white and cream of tartar with
mixer until soft peaks form. Gently fold into batter.
Bake in a preheated waffle iron according to manufacturer's
directions. (Waffles will not get crisp.)
Serve with Homestyle Syrup (recipe below).
Homestyle Syrup
1-1/2 cup sugar
2/3 cup light corn syrup
1/2 cup water
1 tsp. cinnamon
1 can (5 oz.) evaporated milk
1/2 tsp. butter flavoring
1/2 tsp. almond extract
Combine sugar, corn syrup, water and cinnamon in a medium saucepan. Bring to
boil. Boil for two minutes, stirring constantly. Remove from heat; stir in
evaporated milk and flavorings. Serve warm over waffles.
