Cashew Drops
1/2 cup butter or regular margarine
1 cup brown sugar -- firmly packed
1 egg
1/2 teaspoon vanilla
2 cups sifted flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup dairy sour cream
1 3/4 cups whole cashew nuts
Golden Butter Glaze:
1/2 cup butter
3 cups sifted confectioners sugar
1 teaspoon vanilla
3 to 4 tablespoons water
Cream butter and sugar until light and fluffy. Beat in egg and
vanilla to mix thoroughly. Add sifted dry ingredients alternately
with sour cream, blending well. Carefully fold in nuts. Drop by
well-rounded teaspoonfuls 2-in. apart onto greased baking sheet.
Bake in hot oven (400') 8 to 10 minutes. Remove cookies and cool on
racks. Top with Golden Butter Glaze, if desired.
Golden Butter Glaze: Melt butter in saucepan over medium heat until
it turns light golden brown (use care not to overbrown). Remove from
heat and add confectioners sugar, vanilla and enough hot water to
make a glaze that will spread smoothly. Beat well. (Makes enough to
frost or glaze 4 dozen cookies, depending on size)
