Salted Peanut Cookies
1 cup shortening
2 cups brown sugar -- firmly packed
2 eggs
1 teaspoon vanilla
2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups quick-cooking rolled oats
1 cup corn flakes
1 cup salted peanuts (skins on)
Cream shortening and brown sugar until light and fluffy. Beat in
eggs to mix thoroughly. Beat in vanilla. Sift together flour, baking
powder and soda; stir into creamed mixture. Then fold in rolled
oats, corn flakes and peanuts. Drop by rounded teaspoonfuls 2-in.
apart onto greased baking sheet. Bake in moderate oven (350') 10 to
12 minutes. Spread on racks to cool.
