Pecan Butter Cookies Recipe

1 cup margarine, softened
1 cup sugar
2 egg yolks
3/4 teaspoon vanilla extract
3/4 teaspoon almond extract
1/2 teaspoon lemon extract
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
48 pecan halves

Preheat oven to 300� F.

In a medium bowl with an electric mixer at low speed, cream softened margarine and sugar, beating until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in vanilla, almond extract, and lemon extract. Set aside.

In another mixing bowl combine flour, baking powder, and salt. Fold into the creamed mixture, blend until thoroughly mixed.

Form the dough into 1-inch balls and place about 2 inches apart on ungreased cookie sheets. Press a pecan into the center of each cookie. Bake for 20 minutes, or until lightly browned. Cool on wire racks.
