Pineapple and Chocolate Chip Cookies
1/2 cup butter
1/2 cup shortening
1 cup brown sugar -- firmly packed
1 cup white sugar
2 eggs
1 teaspoon vanilla
1 cup crushed pineapple with juice
4 cups sifted flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts
1 (6-ounce) package semisweet chocolate pieces
Cream together butter, shortening and sugars until light and fluffy.
Beat in eggs, one at a time, and vanilla. Stir in pineapple. Sift
together flour, baking soda and salt; divide in half. Add first half
to creamed mixture. When well blended, add second half. Stir in nuts
and chocolate pieces. Drop batter by teaspoonfuls 2-in. apart onto
greased baking sheet. Bake in hot oven (400') 15 mintues. Remove
cookies to racks and cool.
