Rolled Date Cookies
1 cup shortening
2 cups brown sugar
3 eggs
1/4 teaspoon salt
4 cups flour
1 teaspoon baking soda
1 teaspoon vanilla
Cream shortening with brown sugar and eggs. Add salt, flour, baking soda and
vanilla.
Mix and roll out half the cookie mixture so it is 12-inch wide. Spread date
filling (see recipe below) on dough. Roll like jelly roll. Wrap the roll on
waxed paper so it is easier to handle. Repeat with rest of dough. Put in freezer
to set overnight.
The next day, remove from freezer and cut 1/4-inch wide slices and put on an ungreased cookie sheet. Bake in oven at 350� F, until golden brown, about 10 to 12 minutes.
Yield: About 4 dozen cookies.
Date Filling
1 pound of dates, cut up
1/2 cup sugar
1/2 cup chopped nuts
1 cup water
Combine all ingredients in a saucepan and cook over medium heat 15 minutes,
being sure to stir so it won't burn. Cool before spreading on dough.
