Cranberry Biscotti

5 large eggs, divided use
1 1/2 C. sugar
2 t. salt
1 1/2 t. vanilla
1 1/2 t. orange zest, grated
2 T. milk
3 2/3 C. pastry flour
1/2 T. baking powder
1/2 C. sliced almonds
3/4 C. dried cranberries

Combine 4 eggs, sugar and salt in a double boiler over low heat and whip until light in color and thickened. Fold in vanilla, orange zest and milk. Sift together dry ingredients and fold into the egg mixture. Mix in almonds and berries.

Shape into 2 logs about 2 1/2 inches wide by 12 inches long. Beat egg and brush onto surface of logs. Bake at 325� F. for 30 to 40 minutes. Let cool slightly.

Slice diagonally into 1/2 -inch-thick pieces and place on cookie sheet. Bake at 350� F. until toasted, about 25 minutes. Check often.

Makes about 48 biscotti.
